Low-Fat Orange Roughy(Low Cholesterol And Very Tasty; Serves 4) - cooking recipe
Ingredients

1/4 c. extra virgin olive oil
1 lb. orange roughy fillets
1 medium onion, finely chopped
1 clove garlic, minced
1 large tomato, chopped
1 tsp. oregano
1/8 tsp. cumin
1/8 tsp. chili powder
1/2 c. orange juice
1/4 tsp. black pepper
grated rind of 1 small orange
Preparation

Heat most of the oil in a skillet.
Add fish and saute 2 minutes.
Remove from pan and set aside.
Add remaining ingredients except orange juice.
Reduce heat to low and simmer 20 minutes.
Add orange juice.
Use remaining oil to grease sides and bottom of casserole.
Put 1/2 of fish in casserole.
Add 1/2 of the onion mixture.
Layer with rest of fish.
Top with remaining onion mixture.
Cover.
Bake 30 minutes or until bubbly at 375\u00b0. Serve with rice.
