Corn Medley - cooking recipe
Ingredients

2 c. fresh cut corn (3 to 4 ears)
2 Tbsp. butter
1/4 c. chopped onion
1/4 c. chopped green pepper
1/2 tsp. salt
1/4 tsp. ground cumin
1 large tomato, chopped and seeded
2 Tbsp. sugar or sugar substitute
Preparation

Combine first 6 ingredients in pan. Cook and stir over medium heat until butter is melted. Cover and cook over low heat 10 minutes. Stir in tomato and sugar or sugar substitute. Cook, covered, 5 minutes longer.
Yields 5 servings.
