Chicken And Okra Gumbo - cooking recipe
Ingredients

1 cut-up fryer (seasoned and browned)
2 lb. okra
1 large onion, chopped
1 bell pepper, chopped
1 can tomato sauce
1 bud garlic, minced
salt and red and black pepper
about 8 c. water
cooking oil (vegetable)
Preparation

Wash and dry okra.
Chop into thin round slices.
Select a thick pot and put in enough oil to cover the bottom.
When the oil is hot, reduce fire to medium.
Add okra.
Cover to cook.
Remove cover often and stir to keep from sticking.
When stick substance has disappeared and okra is brownish, add onions, bell pepper, garlic and seasonings.
Permit onion and bell pepper to wilt a little, then add water and the tomato sauce.
Add chicken.
Cover and continue cooking for about 1 hour.
Serve over hot rice.
