Gazpacho(A Good Cold Vegetable Soup) - cooking recipe

Ingredients
    4 ripe tomatoes
    1 medium onion
    1 green pepper
    1 large cucumber
    1 clove garlic or 1/8 tsp. garlic powder
    1 c. tomato juice
    1 Tbsp. vinegar
    2 tsp. olive oil
    1 tsp. salt
    1/4 tsp. pepper
Preparation
    Peel tomatoes and coarsely chop.
    Peel, slice and finely chop onion.
    Seed and coarsely chop bell pepper.
    Peel and coarsely chop cucumber.
    Combine vegetables in 2-quart pitcher or bowl. Add finely minced garlic if using fresh clove.
    Combine tomato juice, vinegar, olive oil, salt, pepper and garlic powder (if used) in small bowl.
    Pour over vegetables.
    Chill several hours. Serve 1-cup portions.
    Makes about 6 to 8 cups.
    Contains 64 calories per serving.
