Sausage A La Creole - cooking recipe

Ingredients
    1/2 lb. Italian sausage (hot or mild)
    1 c. water
    1 c. whole canned tomatoes
    2 Tbsp. tomato paste
    1 small onion, chopped fine
    1 Tbsp. celery leaves
    1 small piece bay leaf
    pinch of rosemary leaves
    1/2 clove garlic, mashed
    1 small piece green pepper, minced
    1/2 tsp. sugar
Preparation
    Place sausage and water in a skillet.
    Cover and boil 20 minutes over medium heat.
    Uncover and let water cook out.
    Fry to a golden brown.
    (Do not prick with fork or other sharp instrument, as this will cause meat to be dry and lose juices.)
    Add onion and cook for 1 or 2 minutes.
    Add all remaining ingredients.
    Cover and simmer 30 minutes, stirring occasionally.
