Stuffed Squash Italian - cooking recipe

Ingredients
    2 medium size yellow squash
    1/2 c. chopped fresh mushrooms
    3 Tbsp. chopped green onions
    2 Tbsp. chopped green peppers
    1/4 c. frozen egg substitute, thawed
    2 Tbsp. fine dry bread crumbs
    1 Tbsp. chopped ripe olives
    1 1/2 tsp. fresh basil
    1 1/2 tsp. fresh oregano
    1 1/2 tsp. fresh thyme
    1/4 tsp. ground pepper
    1/4 c. shredded Mozzarella cheese
Preparation
    Prick squash several times with a fork.
    Bake at 325\u00b0 for 25 minutes or until tender; cool slightly.
    Cut squash in half lengthwise.
    Scoop out pulp, leaving 1/4-inch shells.
    Set shells aside.
    Drain pulp; mash.
