Vegetable Shrimp Stir-Fry - cooking recipe

Ingredients
    1 Tbsp. peanut oil
    6 green onions, cut into 1-inch slices
    1 lb. medium shrimp, peeled and deveined
    2 Tbsp. soy sauce
    1 tsp. sesame oil
    6 oz. snow peas
    1 red pepper, cut into 1/2-inch strips
    1/4 lb. large mushrooms, quartered
    1 Tbsp. seasoned rice vinegar
    hot cooked white rice
Preparation
    In a large skillet or wok, heat peanut oil over medium-high heat. Add snow peas, green onions and red pepper; stir and fry for 2 minutes. Add shrimp; continue cooking for 2 more minutes. Add mushrooms; stir-fry until tender and liquid evaporates. Add soy sauce, vinegar and sesame oil; heat thoroughly, stirring constantly. Serve over hot cooked white rice.
