Microwaved Cherry Cheese Cupcakes - cooking recipe

Ingredients
    1 box vanilla wafers
    1 (8 oz.) cream cheese
    1 egg
    1/3 c. sugar
    1 tsp. lemon juice
    1/2 tsp. vanilla
    1 can cherry pie filling
Preparation
    Use paper liners in muffin pan.
    Place 1 vanilla wafer in each of 6 liners.
    Soften cream cheese on 1/2 power for 1 minute. Blend in egg, sugar, lemon juice and vanilla.
    Fill muffin cups 1/2 to 2/3rds full.
    Microwave on 1/2 power for 3 1/2 minutes or until cheese cake begins to set.
    Remove from muffin pan.
    Place a spoonful of pie filling over each cheese cake.
    Cool before serving.
    Yields 12.
