Quick Scalloped Potatoes - cooking recipe

3/4 Tbsp. hot water
4 c. peeled and diced potatoes
1 c. chopped onion
2 tsp. salt
3/4 c. light cream or condensed milk
1/8 tsp. pepper
1/2 c. grated sharp Cheddar cheese
1 Tbsp. minced parsley
Preparation

Mix water, potatoes, onion and salt in a saucepan; cover and cook for 5 minutes over medium heat.
Lower heat and continue cooking for 20 minutes, or until potatoes are tender.
Remove cover and stir gently over low heat until potatoes look dry.
Stir in the remainder of ingredients and heat until cheese melts, about 3 to 4 minutes.
Makes 4 to 6 servings.
