Clam Fritters - cooking recipe

Ingredients
    2 c. finely chopped clams
    2 well-beaten egg yolks
    1 c. cracker crumbs
    salt and pepper to taste
    pinch of cayenne
    1 Tbsp. finely chopped parsley
    enough clam juice to make a heavy batter
    3 stiffly beaten egg whites
Preparation
    Mix clams with egg yolks, cracker crumbs, salt, pepper, cayenne, parsley and clam juice.
    Fold in egg whites.
    Drop the batter by spoonfuls into hot (370\u00b0) fat.
    Cook until they are brown on both sides, turning once.
    Drain on paper towels.
