Eggplant Casserole - cooking recipe

Ingredients
    1 eggplant
    2 cans tomato paste
    1 large onion
    1 clove garlic
    1 Tbsp. sugar
    1 tsp. oregano
    1 Tbsp. parsley flakes
    salt and pepper
    Mozzarella cheese
Preparation
    Brown onion and garlic in 1 tablespoon of oil.
    Add paste and 2 cans of water; simmer for 30 minutes.
    Cut eggplant into thin slices.
    Place in salt water for 1 hour.
    Rinse and drain.
    Fry eggplant until brown on both sides.
    Layer sauce, eggplant and cheese.
    Bake for 1 hour at 350\u00b0.
