Braised Rabbit - cooking recipe

Ingredients
    1 1/2 to 2 lb. rabbit, cleaned
    3 Tbsp. butter or drippings
    1/4 c. chopped onion
    2 stalks celery
    sprig of parsley
    1 c. boiling soup or 1 chicken bouillon cube
    flour
    3 drops Kitchen Bouquet
Preparation
    Cut rabbit into serving pieces.
    Season with salt and pepper. Lightly brown the rabbit in butter in a heavy saucepan.
    Add onions, celery, parsley and soup stock or bouillon.
    Cover the pot tightly; simmer the meat until it is done, about 1 1/2 hours, being careful not to let boil.
    Thicken broth by adding flour and season to taste, adding Kitchen Bouquet, if desired.
