Fresh Cranberry Fruitcake - cooking recipe
Ingredients

2 c. flour
1 c. sugar
1 1/2 tsp. baking powder
1/2 tsp. baking soda
1 tsp. salt
juice and rind of 1 orange
2 Tbsp. oil
1 egg, well beaten
1/2 c. chopped nuts
2 c. cranberries, halved
Preparation

Preheat oven to 350\u00b0.
Combine flour, sugar, baking powder, baking soda and salt in a large bowl.
In a measuring cup, measure orange juice and add water, if necessary, to equal 3/4 cup.
Add grated orange rind and oil and stir in beaten egg.
Pour this mixture into the dry ingredients.
Mix just enough to dampen. Fold in nuts and cranberries.
Spoon into a greased loaf pan. Bake 50 minutes to an hour.
Remove from pan to cool.
Store overnight for easy slicing.
