New Mexican Chicken - cooking recipe

Ingredients
    1 frying chicken, cut up
    1/4 c. oil
    1/4 c. butter or margarine
    2 1/2 tsp. salt
    1/4 tsp. pepper
    1 c. uncooked rice
    3/4 c. chopped onion
    1/2 c. chopped green pepper
    1 clove garlic, minced
    1/4 c. tomato paste
    1 (No. 2) can tomatoes (2 1/2 c.)
    1 can mushrooms (about 1/2 c.)
    2 1/2 c. boiling water
Preparation
    Fry chicken in oil and butter until delicate brown.
    Remove from pan.
    Add salt, pepper and uncooked rice to oil and butter in pan.
    Fry until golden brown, stirring frequently.
    Add onion, green pepper, garlic, tomato paste, tomatoes, mushrooms and water. Add browned chicken; cover and simmer for 30 minutes or until chicken is tender.
