Smoky Sausage 'N Rice - cooking recipe

Ingredients
    1 pkg. (10 or 12) smoked sausage links
    1/4 c. chopped onion
    2 Tbsp. vegetable oil
    1/4 c. chopped green pepper
    2 c. water
    2 Tbsp. minced pimiento
    2 packs instant beef flavored broth
    1/4 tsp. black pepper
    1 c. uncooked rice
    1 (15 to 16 oz.) can black-eyed peas, drained
Preparation
    Cut sausage into bite-size pieces.
    Saute in vegetable oil. Stir in onion and green pepper; continue to saute until vegetables are tender.
    Stir in the water, pimiento, broth and black pepper. Bring to a boil.
    Stir in the rice and black-eyed peas.
    Cover, lower heat and simmer 20 minutes.
    Makes 6 servings (about 1 cup each).
