Mama Cole'S Chow Chow - cooking recipe

Ingredients
    1 gal. chopped cabbage
    12 onions
    12 green sweet peppers
    12 red sweet peppers
    2 qt. chopped green tomatoes
    5 c. sugar
    2 1/2 qt. white vinegar
    4 Tbsp. ground mustard
    1 Tbsp. turmeric
    1 Tbsp. ground ginger
    4 Tbsp. mustard seed
    3 Tbsp. celery seed
    2 Tbsp. mixed whole spices
    1/2 c. salt
Preparation
    Chop onions and peppers.
    Mix all vegetables with 1/2 cup of salt.
    Let stand overnight.
    Drain.
    Place mixed spices in a permeable bag.
    Add sugar and other spices to vinegar.
    Simmer 20 minutes.
    Add all other ingredients and simmer until hot and well seasoned.
    Remove \"spice bag.\"
    Pack hot chow chow into hot, sterilized jars and seal at once.
