Eggplant Caviar - cooking recipe

Ingredients
    1 to 2 lb. eggplant
    1 c. onion
    1 c. scallions
    2 garlic cloves, minced
    1 c. green pepper, chopped
    1 c. tomato, diced
    1/4 c. olive oil
    2 tsp. sugar
    2 tsp. lemon juice
Preparation
    Preheat oven to 400\u00b0.
    Place eggplant on sheet of aluminum foil and bake 1 hour.
    Let cool.
    Remove pulp.
    Should be 3 to 4 cups.
