Luncheon Asparagus - cooking recipe

Ingredients
    3 Tbsp. butter
    3 Tbsp. flour
    1 c. milk
    1 c. grated Cheddar cheese (mild)
    1 small onion, grated
    1 (3 oz.) can mushrooms, drained
    1 (14 oz.) can asparagus spears, drained or fresh cooked asparagus
    4 toasted English muffins
    8 pieces crisp bacon
    1/4 c. sherry (optional)
    salt and pepper
Preparation
    Melt butter; add flour and cook for several minutes.
    Add milk gradually, stirring until thickened; add cheese and allow to melt. Salt and pepper to taste.
    Add onion and mushrooms.
    Put asparagus on muffins; pour sauce over this and sprinkle with bacon pieces.
    Sherry may be added to sauce.
    Serves 4.
