Shrimp Gumbo - cooking recipe

Ingredients
    1/8 inch of cooking oil
    4 heaping Tbsp. plain flour
    1 large onion, chopped
    5 cloves garlic, chopped
    1 large bell pepper, chopped
    1 can Ro-Tel tomatoes
    1 can regular tomatoes
    1 pkg. cut okra
    3 lb. peeled, deveined shrimp
    salt and pepper to taste
Preparation
    Place oil in Dutch oven.
    Heat until hot; add flour and stir continually until browned.
    This is your roux.
    Add other ingredients in order.
    Cook until done.
    Add water if it cooks down a little low.
    Serve with rice.
    Add some crab meat if desired.
