Zucchini Casserole - cooking recipe

Ingredients
    2 1/2 lb. zucchini or 8 c., cut in 3/8 inch slices
    1/2 c. chopped onion
    1/2 c. chopped green pepper
    4 Tbsp. butter
    1 pkg. dry spaghetti sauce mix
    1 c. water
    1 can (6 oz.) tomato paste
    1 c. shredded Mozzarella
    2 Tbsp. grated Parmesan cheese
    1 can (3 oz.) sliced mushrooms, drained
Preparation
    In large saucepan cook zucchini until crisp-tender, 4 to 5 minutes.
    Drain well and set aside.
    In same pan cook onions and green pepper in butter until tender, not brown.
    Remove from heat. Stir in mushrooms, dry sauce mix, water and tomato paste, mix well.
    Gently stir in zucchini and Mozzarella cheese.
    Turn into a 10 x 6 x 2-inch baking pan or 1 1/2-quart casserole.
    Sprinkle with Parmesan cheese.
    Bake at 350\u00b0 for 30 to 35 minutes.
