Spinach Souffle - cooking recipe

Ingredients
    2 Tbsp. margarine
    2 Tbsp. whole wheat flour
    1/2 c. skim milk
    1/2 pkg. frozen spinach, drained and chopped
    1 Tbsp. chopped onion
    1/4 tsp. nutmeg
    black pepper to taste
    6 egg whites
    3 Tbsp. Parmesan cheese
Preparation
    In small heavy saucepan melt margarine.
    Blend in flour; cook until mixture is smooth and bubbly.
    Remove from heat and gradually stir in milk.
    Bring to boil for 1 minute; remove from heat.
    Stir in spinach, onion, nutmeg and pepper.
    Beat egg whites until stiff.
    Fold gently into spinach mixture.
    Sprinkle with cheese.
    Pour into 1 3/4-quart casserole dish.
    Bake at 350\u00b0 for 35 minutes.
    Serve immediately.
    Serves 4, approximately 120 calories per serving.
