Petite Cheesecakes - cooking recipe
Ingredients

3 (8 oz.) pkg. cream cheese
1 c. sugar
5 eggs
1 tsp. vanilla
vanilla wafers
fruit pie filling
Preparation

Mix cream cheese, sugar and vanilla together. Add eggs, one at a time. Beat until light and fluffy. Line cupcake tins with double paper liners. Place vanilla wafers in the bottom of each. Add cream cheese mixture to each liner so it is 2/3 full. Bake at 350\u00b0 for 20 minutes. Cool. Top with pie filling. Chill until ready to serve. Top with whipped cream if desired. Serves 42.
