Grecian Curry - cooking recipe

Ingredients
    1 Tbsp. olive oil
    1 lb. cubed chicken
    1 can (16 oz.) stewed tomatoes
    1 medium onion
    1/2 c. yogurt (plain or vanilla)
    1 Tbsp. peanut butter
    curry to taste (1/2 to 1 Tbsp. for mild)
    1 1/2 tsp. cumin
Preparation
    Saute onion in olive oil in a heavy skillet.
    Saute chicken in onion and oil.
    Add remaining ingredients and reduce sauce.
    Serve over rice.
    Yields 3 servings.
