Rice Pie - cooking recipe

Ingredients
    2 cans chicken broth
    2 c. rice (uncooked)
    1 medium onion, chopped
    2 Tbsp. oil (olive)
    1/2 c. grated Parmesan cheese
    1/2 tsp. nutmeg
    1 box pie crust
    salt and pepper to taste
Preparation
    Prepare pie crust, adding the nutmeg to the dry ingredients. Cook the rice in broth until liquid is absorbed.
    Saute onion to translucent (in olive oil).
    Mix rice, onion (scrape oil out of pan with rubber spatula) and cheese until well blended.
    Add your salt and pepper.
    Mix a little more and place mixture in bottom pie shell.
    Cover with other half of shell and bake 1 hour at 350\u00b0. Crust will be golden brown.
    This can be served warm or cold.
