Ingredients

3 1/2 c. cornflakes
1 c. chopped, pitted dates
3/4 c. sugar
2 eggs, beaten
1 c. chopped walnuts
1 tsp. vanilla
1 1/3 c. flaked coconut
12 candied cherries, cut into halves
Preparation

Crush cornflakes slightly with hands; set aside.
Combine dates, sugar and eggs in a 10-inch skillet.
Cook over medium heat, stirring constantly, until mixture pulls away from the sides of the pan, about 5 minutes.
Remove from heat.
Stir walnuts and vanilla into date mixture.
Gently stir in cornflakes.
Cool slightly, about 5 minutes.
Shape mixture into 1 1/2-inch balls. Roll each in flaked coconut.
Place on waxed paper lined baking sheets.
Press a candied cherry half in each ball, flattening slightly.
Makes 24.
