Blue Cheese Eggplant Casserole - cooking recipe
Ingredients

1 large eggplant (about 1 1/2 lb.)
2/3 c. chopped onions
1 c. fine, dry bread crumbs (about 3 slices)
1/2 c. Blue cheese, crumbled
1 egg, well beaten
1/8 tsp. marjoram
Preparation

Peel and slice eggplant.
Combine in saucepan with chopped onion.
Cook 7 to 10 minutes or until eggplant is tender when pierced with a fork.
Drain immediately.
