Baked Potato Soup - cooking recipe

Ingredients
    4 medium potatoes
    1/2 c. Cheddar cheese (low-fat cheese can be substituted)
    1/4 c. lean bacon bits
    2 scallions
    skim milk
    salt and pepper to taste
Preparation
    Peel and cut up potatoes. Boil until very tender. Drain. Mash potatoes and season with salt and pepper. Add cheese and bacon bits. Stir until combined. Add milk until desired thickness is achieved. Stir in scallions. Heat through and serve.
