Ingredients

2 c. unsifted all-purpose flour
2 1/2 tsp. baking soda
2 tsp. cinnamon
1 tsp. salt
2 c. carrots
1 c. oil
2 c. sugar
3 eggs
1 (8 oz.) can crushed pineapple and juice
1 1/2 c. flaked coconut
1/2 c. chopped nuts
Preparation

Sift the first 4 ingredients together and set aside.
Grate carrots and set aside.
Mix and cream the oil, sugar and eggs.
Add flour mixture to oil, sugar and eggs.
Add carrots, then stir in the pineapple, coconut and nuts.
Bake in a 9 x 13-inch pan at 350\u00b0 for 50 to 60 minutes.
I find it best to add pineapple and juice to egg mixture before adding the flour.
