Ratatouille Nicoise - cooking recipe

Ingredients
    1 onion
    1 lb. zucchini (unpeeled)
    2 eggplants (unpeeled)
    6 fresh tomatoes
    2 peppers (1 red, 1 yellow)
    2 cloves garlic
    1 leaf basil
    1 leaf laurel
    a bit of thyme
    salt and pepper
    3 Tbsp. olive oil
Preparation
    Pour olive oil in heavy pan and brown eggplant, onion and squash together until soft.
    Add all other ingredients and simmer until well cooked, approximately 2 hours.
    Serve hot or cold.
