Eggplant And Rice Fritters - cooking recipe
Ingredients

2 c. cooked, mashed eggplant
1 1/2 c. cooked rice
2 tsp. grated onion
2 eggs, slightly beaten
1 c. grated sharp Cheddar cheese
1/4 c. flour (may add more for thickness)
1 1/2 tsp. pepper
dash of hot sauce
cooking oil or bacon drippings
Preparation

Combine eggplant with all ingredients except oil.
Mix well. Drop from spoon into 1/2-inch hot oil in skillet.
Fry until brown on each side.
