Crawfish Etouffee - cooking recipe
Ingredients

1/4 c. margarine
1/3 c. flour
1 c. onion
1 c. celery
1 c. bell pepper
2 cloves garlic
3 c. crawfish tails
1/4 c. parsley
salt to taste
Preparation

Melt margarine and add flour to make a roux or gravy base. Then add onion, celery, bell pepper and garlic and cook for 15 minutes.
Add remaining ingredients and simmer approximately 20 to 30 minutes.
Serve over rice with hot bread.
