Carrot Cake - cooking recipe
Ingredients

1 1/2 c. oil
2 c. sugar
4 eggs
2 c. grated carrots or I use 2 jars junior baby food carrots
3 c. flour
3 tsp. baking soda
2 tsp. cinnamon
1 c. chopped nuts
1 pinch salt
Preparation

Mix together first 4 ingredients.
Add flour, soda and cinnamon.
Add chopped nuts and salt.
Blend all together.
Bake in a Bundt pan or fluted pan approximately 1 hour.
Test with a toothpick for doneness.
May ice with vanilla or cream cheese frosting.
