Potato Salad(Serves 100 People) - cooking recipe

Ingredients
    40 lb. Irish potatoes, cubed
    3 c. pickle relish
    3 doz. boiled eggs, diced
    2 yellow onions, chopped
    1 red onion, chopped
    1 tsp. mustard
    2 pt. mayonnaise
    1 1/2 Tbsp. butter or grease
    1 tsp. red pepper
    salt
    pepper
    1 (8 oz.) jar pimentos
    paprika for color
Preparation
    Boil cubed potatoes until tender and drain; add butter. Add relish,
    eggs,
    pimentos, onions, mustard and mayonnaise. Mix well.
    Add\tred
    pepper, salt
    and\tblack pepper to taste. Sprinkle top
    with\tpaprika
    for
    color.
    This
    will serve 100 people. (You
    may
    always figure 2 1/2 servings for each pound of potatoes).
