Fried Rice - cooking recipe

Ingredients
    6 eggs, well beaten
    1 c. chopped green onions
    1 c. diced ham, cooked meat or shrimp
    1 (10 oz.) pkg. frozen peas and carrots, thawed (right from pkg.)
    6 c. cooked long grain rice (prepared the day before much better)
    2 Tbsp. soy sauce
    1/2 tsp. salt
    7 Tbsp. oil
Preparation
    Heat wok or large frying pan.
    Add oil.
    Stir-fry green onions.
    Add eggs.
    When cooking eggs and onions, cook as scrambling eggs; keep eggs moist.
    Push to side of pan.
    Add peas and carrots.
    Add meat; mix together.
    Keep stirring.
    Add rice. Make sure rice and egg mixture are all broken up.
    Can be made in advance, but leave vegetables out because it has a tendency to change color.
    Keep in warm oven at 150\u00b0.
    Serves 12.
