Zucchini Casserole - cooking recipe

Ingredients
    2 onions, thinly sliced
    6 Tbsp. butter or fat free margarine
    2 lb. zucchini, thinly sliced
    2 medium size thinly sliced tomatoes
    salt to taste
    pepper to taste
    1/4 c. grated Parmesan cheese
Preparation
    Saute onions in butter until yellow.
    Add zucchini; cook and stir 5 minutes.
    Add tomatoes, salt and pepper.
    Cover and cook 5 minutes.
    Either reduce heat and cook until tender, about 25 minutes or put in casserole dish, sprinkle with grated cheese and bake in 375\u00b0 oven until browned, about 45 minutes to 1 hour.
    This may be prepared the day before serving.
