Ingredients

3/4 c. sugar
3 Tbsp. flour
1/16 tsp. salt
1 large lemon (juice and grated rind)
2 egg yolks, beaten
1 c. milk
2 egg whites, stiffly beaten
Preparation

Mix dry ingredients. Add lemon juice and grated rind. Beat egg yolks. Combine with milk. Strain. Combine with lemon mixture. Fold in stiffly beaten egg whites. Pour into oiled custard cups. Set in pan, surrounded with hot water and bake at 325\u00b0 for 40 minutes. Result is a custard bottom with sponge cake topping. Serve warm.
