Cranberry Pork Chops - cooking recipe

Ingredients
    4 (6 oz.) lean center loin pork chops (1/2-inch thick)
    1/2 tsp. coarsely ground pepper
    vegetable cooking spray
    3 Tbsp. water
    2/3 c. fresh or frozen cranberries, thawed
    2 Tbsp. + 1 1/2 tsp. sugar
    2 Tbsp. unsweetened orange juice
    2 Tbsp. water
    1/8 tsp. ground cinnamon
    1/8 tsp. ground ginger
    fresh mint sprigs (optional)
Preparation
    Trim fat from chops.
    Rub chop with pepper.
    Coat a large nonstick skillet with cooking spray.
    Place over medium-high heat. Add chops and cook until browned on both sides.
    Add 3 tablespoons water to skillet.
    Cover and cook over medium heat for 25 to 30 minutes until tender.
