Zucchini Casserole With Chilies - cooking recipe

Ingredients
    1 1/4 lb. zucchini
    4 eggs
    1 (4 oz.) can green chilies
    1/2 c. milk
    1/4 to 1/2 c. butter
    3/4 lb. Jack cheese
    1 tsp. salt
    2 tsp. baking powder
    3 Tbsp. flour
    1/4 c. chopped parsley
    2 slices bread
    1/2 tsp. oregano
Preparation
    Wash and cut zucchini to 3/4 inch chunks.
    Cook until barely tender.
    Beat eggs and milk.
    Mix and sift dry ingredients; add to milk and egg mix.
    Add cubed zucchini, cheese, chopped chilies (remove seeds for milder flavor), parsley and oregano.
    Break up 1 slice of bread into egg mixture.
    Melt butter and pour on bottom of 2 1/2 quart casserole; break up 1 slice of bread into butter. Pour egg mix over bread in casserole.
    Bake at 350\u00b0 for 30 minutes.
    Serve with salad and French bread.
    Makes 6 to 8 servings.
