Potato Pancakes - cooking recipe

Ingredients
    3 c. grated raw potatoes
    2 eggs, well beaten
    1/3 c. finely diced onion
    2 to 3 Tbsp. flour
    1 tsp. sugar
    1 tsp. salt
    1/2 tsp. pepper
Preparation
    Squeeze potatoes to get off as much water as possible. Combine potatoes, eggs, onion, flour, sugar, salt and pepper. Beat well.
    Drop mixture by heaping tablespoons on well greased hot griddle or pan and spread thinly.
    Fry both sides until a golden brown.
    Add more shortening to continue frying as needed.
