Citrus Pepper Roast Beef - cooking recipe

Ingredients
    1 (8 to 10 lb.) standing rib roast
    2 tsp. grated orange peel
    2 cloves crushed garlic
    1 tsp. dried thyme leaves
    1 tsp. salt
    1/2 tsp. cracked black pepper
Preparation
    Combine spices and rub evenly over surface of rib roast.
    Do not add water.
    Do not cover roast.
    Roast at 350\u00b0 for 3 to 4 hours, depending on whether you like your meat rare, medium or well done.
    Let stand 20 minutes before carving.
