Fattoush(The Peasant Salad) - cooking recipe
Ingredients

2 cucumbers, peeled and diced
1 green pepper, diced
1 bunch green onions, chopped
1/2 c. olive oil
1/4 c. lemon juice
2 c. croutons or crisp toasted Lebanese bread, broken in small pieces
3 medium tomatoes, cubed
1 Tbsp. mint
1 tsp. salt
1/2 tsp. sumac
2 c. chopped lettuce
Preparation

Combine vegetables in a large bowl.
Add oil, lemon juice (preferably fresh), salt and sumac.
Mix.
Chill at least an hour. Just before serving, add croutons.
Toss lightly and serve.
