Potato Salad - cooking recipe
Ingredients

8 medium sized potatoes, cooked, peeled and diced
1 stalk celery, diced
2 hard-cooked eggs, sliced
1 onion, minced
4 slices bacon, diced
1 c. sugar
1 1/2 tsp. salt
1/4 tsp. black pepper
1/4 tsp. dry mustard
1/2 c. cider vinegar
1/2 c. water
2 eggs, beaten
Preparation

Lightly toss first 4
ingredients
together
in a bowl. Fry bacon in skillet until
browned.
Stir
a
mixture
of the next 4 ingredients into vinegar
and water.
Add to the beaten eggs and mix well.
Pour
egg
mixture
into hot bacon and fat and stir until mixture
thickens, about 10 minutes.
Pour over potato mixture and toss
lightly.
Chill
several hours before serving.
