Pineapple-Cheese Stuffed Celery - cooking recipe

Ingredients
    1/2 c. crushed pineapple, drained
    2 pkg. Philadelphia cream cheese, softened
    2 stalks celery, cleaned and cut into thirds
    1 large eggplant, already baked
    1 large tomato, chopped fine
    1 green onion, chopped fine
    1 clove garlic
    4 Tbsp. fresh parsley
    3 Tbsp. olive oil or vegetable oil
    1/8 tsp. oregano or to taste
    3 Tbsp. wine vinegar
Preparation
    Combine all ingredients together.
    Chill for 2 or more hours. Serve.
