Pear Mincemeat - cooking recipe

Ingredients
    7 lb. ripe pears
    2 lb. seedless raisins
    1 Tbsp. cloves, cinnamon, nutmeg, allspice and ginger
    1 lemon
    6 3/4 c. sugar
    1 c. vinegar (white)
Preparation
    Cut and quarter pears. Cut lemon into quarters, removing seeds.
    Put fruits through food chopper. Combine remaining ingredients in a large kettle. Add fruit mixture. Bring to a boil over medium heat.
    Simmer 40 minutes and pack at once in hot jars. Seal.
    Process in boiling water bath 25 minutes.
    Makes 9 pints.
