Potato Rolls - cooking recipe

Ingredients
    1 1/2 c. water
    1 pkg. dry yeast
    2/3 c. sugar
    1 1/2 tsp. salt
    2/3 c. shortening
    2 eggs
    1 c. warm mashed potatoes
    7 to 7 1/2 c. flour
Preparation
    In a large bowl, thoroughly mix 2 cups flour, sugar, salt and undissolved dry yeast.
    Combine water and shortening in a saucepan.
    Heat over low heat until liquids are warm.
    (Shortening does not need to melt.)
    Gradually add to dry ingredients and beat 2 minutes at medium speed of mixer, scraping bowl occasionally. Add 3/4 cup flour, or enough flour to make a thick batter, eggs and mashed potatoes.
    Beat at high speed 2 minutes, scraping bowl occasionally.
    Stir in enough additional flour to make a soft dough.
    Turn onto lightly floured board.
    Knead until smooth and elastic.
    Place greased side up in a large Tupperware greased bowl.
