Apple Oat Bran Muffins(Healthful Eating) - cooking recipe

Ingredients
    3 c. oat bran
    2 1/2 c. whole wheat flour
    1/2 tsp. salt
    2 tsp. baking soda
    2 eggs
    1/4 c. molasses
    1/4 c. olive oil or canola
    2 c. apple juice concentrate
    2 c. skim milk
    2 1/2 c. Granny Smith apples (about 2 large apples)
    1 1/2 c. raisins
Preparation
    In a small bowl, combine oat bran, whole wheat flour, salt and baking soda; set aside.
    In a large mixing bowl, beat eggs; stir in molasses.
    Mix in olive oil, apple juice concentrate and skim milk.
    Gradually add flour mixture using a wire whisk.
    Mix ingredients just until moistened.
    Stir in chopped apples and raisins.
    Pour into paper-lined muffin pans.
    Bake at 350\u00b0 for 20 to 25 minutes or until toothpick inserted into center comes out dry.
