Eggplant Souffle - cooking recipe

Ingredients
    1 medium-size eggplant
    3 or 4 eggs
    salt to taste
    pepper to taste
    1/2 to 3/4 c. Cheddar cheese, shredded
    grated Parmesan cheese
Preparation
    Steam eggplant until tender.
    Put in blender and mix in eggs, a little at a time.
    Pour into casserole dish.
    Mix in Cheddar cheese.
    Sprinkle Parmesan over top.
    Bake at 350\u00b0 for 40 minutes.
