Zucchini Casserole - cooking recipe
Ingredients

2 1/2 lb. zucchini
3 c. shredded Mozzarella cheese
1 1/2 c. Parmesan cheese
1 1/2 c. seasoned bread crumbs
1/4 c. low-fat margarine
paprika (for top)
Preparation

Slice zucchini until just tender-crisp; drain and mix with margarine.
In separate bowl, mix bread crumbs and Parmesan cheese; save 1/4 cup for topping.
Mix together with zucchini. Layer with Mozzarella cheese.
Top with cheese and bread crumbs. Sprinkle with paprika.
Bake for 30 minutes at 350\u00b0.
