Salmon Croquettes - cooking recipe

Ingredients
    1 Tbsp. butter
    4 Tbsp. flour
    1 cup milk
    2 cups finely ground salmon
    1 tsp. lemon juice
    1/2 tsp. onion juice or onion
    1/2 tsp. salt
    1/2 tsp. pepper
    1 tsp. parsley
    1 egg
    fine cracker crumbs
Preparation
    Melt butter, add flour and combine.
    Add milk and cook until very thick, stirring constantly.
    Add salmon and seasoning and chill thoroughly.
    Form into small rounds about 1/2 inch thick. Roll in crumbs, then in slightly beaten egg and in cracker crumbs again. Chill.
    Fry in deep fat until brown.
