Caldo Verde(Kale Soup) - cooking recipe

Ingredients
    1/3 c. olive oil
    1 chopped onion
    3 medium potatoes
    6 c. water
    1/2 lb. kale or collard greens
    salt to taste
    1/2 tsp. imitation bacon bits (optional)
Preparation
    Saute onion with oil.
    Peel and dice potatoes.
    Cook until soft.
    Mash them into the water.
    Slice kale as thinly as possible.
    Add to potatoes.
    Simmer for 15 to 30 minutes.
    Add onion.
    Heat for 1 to 2 minutes.
    Salt to taste.
    Serve with cornbread.
